Coming from 7-0 down early in the contest, the Red Devils forward pack helped lead the charge for the home side and set up a half-time lead.
After the main break, the Red Devils went from strength to strength to extend their lead and hold off a last-ditch effort from the Bulls.
The win is Gunnedah's third in a row and marked Moree's first loss for the season.
Bulls co-coach Damien Kelly said it was an "extremely disappointing" game.
"It wasn't a good day out," he said.
"I can't take any positives out of that game at all. It was a bad day out. Nothing went right.
"We can play a lot better than that. There's been a couple of games where we haven't played as well as we should and got away with it, but we can't keep playing poorly and winning.
"It might be the kick up the backside we needed."
Moree were missing a number of key players who were out due to "weddings and injuries", however Kelly said it's a poor excuse.
"We had a side that could have beaten Gunnedah," he said.
"Gunnedah are a good side, but it was the effort we put in. The score could have been 3-0 and it wouldn't have pleased me any more. They lacked all enthusiasm.
"Everyone knows we had a lot of guys out - we only had three backs and three of our leading forwards in our usual side, but I thought it would be a good opportunity for others to step up. But as a team we didn't play well. I thought we'd show a bit more fight."
Kelly said defence was the biggest issue and something they need to work on if they want a chance at the winning the premiership this year.
"Conceding 30 points is not going to win us the competition," he said.
And, in terms of standout players, Kelly was left short.
"As a team, we were mediocre together," he said.
"It's hard to find anyone that stood out whatsoever.
"It's maybe a good thing, it'll bring us back down to earth and realise we need to play better.
"We have players returning this week, so hopefully we can turn it around and get back on track."
Red Devils coach Dale Martin said while his side played well, he knew Moree was under-strength.
"Moree is a very good side and will certainly be there at the end of the season," Martin said.
"We know they are missing a few really good players, but you can only beat what is in front of you on the day.
"This is a really big scalp for us."
Martin said the side's forward pack "was the difference" in Saturday's win.
"I can't really single out any one player, I think our whole forward pack played well," he said.
"Our subs stepped up when they got their chance and everyone banded together to make sure we got the job done.
"Honestly mate, I'm stoked with that result."
The Bulls will now host Scone at Weebolla Oval this Saturday, May 25.
All games have been moved forward this week, with second grade kicking off at 12.30pm and first grade taking the field at 2pm, to ensure players and members can enjoy a day out at the rugby before going to the Moree Picnic Races.
