Café Gali chef, Monica Smith, was one of the lucky locals who was able to cook with Mr Martelossi as they made risotto together.
Mr Martelossi travelled to Moree to promote a competition running for young chefs.
The competition is called Armonia and encourages chefs, cooks, food bloggers and enthusiasts along with consumers to expand their knowledge of extra virgin olive oil.
As previous years, where the judging panel consisted of some of the best chefs in Australia including Gary Mehigan of MasterChef Australia, the competition ‘Armonia in the Kitchen’ will take place in a famous cooking school in Sydney.
This year’s theme is extra virgin olive oil and rice, and competitors will prepare their best risotto for the judges to taste.
The previous competition saw the winning chefs complete a two-week internship with Jamie Oliver at Jamie Oliver’s Fifteen in Cornwall UK.
The theme was chosen this year because risotto rice has always been considered one of the best products to maximise all degrees in the flavours of olive oil, and was a good opportunity to launch the follow-on competition to find the best risotto in Australia.
The competition is open to all food lovers, but spaces are limited, if you would like to participate drop by Café Gali and pick up an entry form.
The gala dinner and award ceremony will be held in Sydney in December.
